CAVA BAJA

I was born in Madrid, Spain, and arrived in Taiwan at the end of 2009 with a simple idea: to share Spanish gastronomy through respect for product, tradition and the pleasure of gathering around a table.

Over time, Taiwan became my home. Here I built a family, friendships and a way of cooking transformed by local ingredients, flavours and customs.

My first project was El Marqués, a restaurant that opened in 2017 and allowed me to bring Spanish cuisine closer to thousands of guests in Taipei. El Marqués also holds official certification from Restaurants from Spain.

Years later, CAVA BAJA opened its doors in mid-October 2024 as a natural evolution of that path: a more personal space where Spanish tradition dialogues with creativity, technique and the influences discovered while living between two cultures.

CAVA BAJA is part of Restaurants from Spain, the official Foods & Wines from Spain / ICEX certification for restaurants outside Spain committed to authentic, high-quality Spanish cuisine.

Every dish that reaches the table has been personally designed. Some begin with traditional recipes reinterpreted through a contemporary lens; others explore new ideas, such as the encounter between Basque cheesecake and Taiwanese fermented tofu.

Today I continue selecting Spanish wines, importing products I admire and creating gastronomic experiences that speak of my roots, my present and everything learned over these years.
